VEGGIE STEW: SLOW COOKER


One of my absolute favorite gifts of 2015 was a slow cooker. I have never owned one before and I was a bit intimidated to cook with it at first.

And what I learned is that a slow cooker is magic. haha. It is! I LOVE my slow cooker so much!!!!

A slow cooker takes 'simple cooking' to an entirely new level.  You basically toss in ingredients & seasonings, set the timer and walk away from the kitchen.  And hours later, a beautiful - hearty - organic stew or soup is waiting for you.

You can make so many slow cooker recipes but my favorite is my 'SW Veggie Stew'!  Prepare to be surprised by how easy it is to make & how budget friendly too!!!

SW Veggie Stew Ingredients:

The following ingredients are all organic.

I chop & toss!

So, chop veggies to your liking and then toss them into the slow cooker! I told you this was easy!

Carrots - Celery - Green Beans - Red Potatoes - Butternut Squash - Kale - Sweet Peppers (I love yellow peppers) - Zucchini - Spinach

*Add anything else you'd like.

SW Veggie Stew-Slow Cooker Tips!

This SW Recipe is ridiculously simple & AMAZING for holiday feasts w/ family & friends! I am making this for Thanksgiving this year. I make this once a week.

 My recommendation is to place your slow cooker on 'low' all day long.

I put the ingredients in around 8:00am and eat around 6:30pm or later.  The organic veggies melt in your mouth!

SW Veggie Stew Spices

I sprinkle in generous amounts of the following:
Himalayan Sea Salt - Rosemary - Basil - Sage - Thyme - Dill - Ground Black Pepper - Cinnamon

Food for Thought via this meal

I do not think there is a more simple stew recipe out there. And I have the slow cooker to thank for that! It takes approximately 5 minutes to put this meal together.  And when I am ready to serve a bowl to a loved one, I do add an extra sprinkle of the spices above & sometimes I will make a yummy pesto sauce. 

And what you have is a healthy & hearty meal that your body will thank you for!
