I found the most SIMPLE and delish recipe for Vegan Pate!!! I was reading Shape Magazine's article
'Lunch for a Month: 31 Grab-and-Go Meals Under 400 Calories'. All 31 recipes can be veganized but I chose the Vegan Pate to start with! So filling - healthy - quick! Recipe below:
1/4 cup cooked lentils pureed with 2 tablespoons walnuts and 1 tablespoon olive oil. Serve with 4 whole-wheat crackers and 4 large olives: 371 calories
