Fall is in full swing in Chicago which means 'tis the season' of pumpkin everythingggg....yummm! My mind goes straight to pumpkin pie which I LOVE!
I do adore Fall and all that this season represents (psst, summer is still my favorite): The colorful leaves, full beautiful trees, warm breeze in the air coupled with a bit cooler temps, plaid, football season, pumpkin patches, apple picking, pumpkin lattes (I don't drink them but I love how they smell), fresh organic seasonal produce at farmers markets, butternut squash w/ cinnamon and pumpkin spices flavor more dishes. Did I miss anything (smile)?
Chicago seems to sense the 'urgency' in being outdoors this particular season because we know what comes next......ugh, I won't even say it.

When I do indulge in a dessert now-a-days, I make sure that it has the healthiest fats, natural sugars, organic ingredients, oils, etc. So, I typically make my own so that I know organic ingredients of the highest quality are being used. And I share ((((0:
I love when a dessert doesn't leave you with that sugar crash either. For me, that crash is no longer worth the seconds of ''yum''.
This Raw Pumpkin Pie Cheesecake is hearty, creamy & soooo yummy without any processed ingredients at all. I actually prefer this to traditional pumpkin pie. And I will be making this (again) for an event a friend is hosting this weekend. It's a great addition for Thanksgiving as well.
