I have taken both my avocado & tahini game to an entirely new level as of late! Have you ever eaten tahini? I haven't until recently. I know, it's ridiculous that I've not eaten it sooner. I recently received the book Deliciously Ella & Ella discusses how tahini is a staple ingredient in her cupboards. So, I decided to give it a try. Let me just tell you that eating organic & healthy is not expensive (at all). I am amazed how many meal variations I have learned to make with the following ingredients: Broccoli, Tomatoes, Avocados, Tahini, Lemons, Apple Cider Vinegar, Sea Salt & Herbs (and occasionally a gluten free seed bread). I have made avocado toast, stuffed avocados, a bowl of steamed broccoli drizzled w/ tahini, roasted broccoli covered in avocado tahini dressing and a tahini dipping sauce for cooked veggies. Incredible! I tend to get on these kicks when I find a new ingredient or new dish and make a lot of variations of it. But, here is the thing.... I don't provide you with recipes because I don't typically follow recipes to the letter. I just 'create' in the kitchen. I experiment. I rarely measure a thing & I create based on what I already have in the pantry. I do tend to scour the cooking books I have in the kitchen, give them a glance and then make my own variation of whatever seems appealing. I tend to go to Deliciously Ella & Oh She Glows for all of their ideas. I also love Dr. Josh Axe's recipes & good ole google. So recently, I have been roasting organic broccoli. And then I will place two huge spoonfuls of tahini in the pan, a squeeze of lemon, sea salt & crushed red pepper and mix. The result is this nutty flavored & savory dish that's both creamy & so darn good. And it's healthy without refined sugar.
When I make an avocado toast, I like to make it different every single time for flavor. I will either cut or mash an avocado onto a gluten free seed bread, drizzle olive oil, squeeze a lemon over the avocado and sprinkle a variety of nuts & seeds. I think what I will try next is to drizzle tahini over the avocado. Yum! What are you some of your favorite 'go to' dishes? And how do you work avocados or tahini into your meals? I'd love to hear!
